Mint Sauce

Traditional accompiament with lamb.

Ingredients
    Mint Sauce
  • 1/4 pint vinegar
  • 1/2 pint water
  • 4 tablespoons chopped fresh mint
  • 2 tablespoons sugar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 4 tablespoons warm water
Instructions

Simmer vinegar and water with 2 heaped tablespoons chopped mint until reduced to half the original quantity. Remove from heat and strain. Add 4 tablespoons warm water, lemon juice, sugar and salt. When cold add another 2 tablespoons chopped mint leaves.
